Directions

Heat 2 tablespoons of olive oil in a large 12-inch skillet over medium-high heat until shimmering—this ensures a good sear.
Add the sliced sausage in a single layer. Cook without stirring for 3 minutes until browned, then flip and cook 2 more minutes. Transfer to a plate; set aside.

Reduce heat to medium and add remaining 1 tablespoon olive oil to the skillet. Tip: Don't wipe the pan—those browned bits are flavor gold.
Add the diced potatoes, spreading them evenly. Cook undisturbed for 5 minutes to develop a crispy crust, then stir and continue cooking for 8–10 minutes, stirring every 2 minutes, until golden and tender when pierced with a fork.
