| 3Cloves Garlic | |
| 1/4Cup Tomato Paste | |
| 6Cups Beef Broth | |
| 1Cup Red Wine | |
| 1Table Spoon Worcestershire Sauce | |
| 3Sprig Thyme | |
| 3Leaves Bay | |
| 1lb Baby Potatoes, Halved | |
| 1Cup Frozen Peas | |
| 1/4Cup Chopped Parsley |
Directions

In a large pan over medium, heat oil. Add beef and cook until seared - about 10 mins. Remove from heat.

In large pot and oil over medium-high. Cook onions, carrots, and celery. Stir until soft - about 7 mins - season with salt and pepper. Add garlic and tomato paste, stirring constantly for about 2 mins. Add beef and any juices from the pan. Add broth, wine, worcestershire, thyme, and bay leaves. Bring to a boil then reduce heat to medium-low and bring to simmer - season with salt and pepper. Cover and stir occasional until beef is tender - about 30 mins.

Add potatoes and bring to a boil, covered until potatoes are tender - about 10 mins.

Remove bay leaves and thyme. Stir in peas and stir - about 2 min for peas to warm through. Taste and add seasoning.
